Kadipatta (curry leaf) powder

For you desis out there, this is not the version you eat with rice. We pruned our monster kadipatta, and I was debating the best ways to store all the leaves. We vacuum-sealed and froze some, wrapped some in damp paper towels and put it in a Tupperware box in the fridge, and oven-dried some and powdered it. (Incidentally, here’s a link to an interesting experiment on the best ways to store curry leaves and preserve their nutritional value).

This is the oven-dried powdered result. Very pretty, very green. Unfortunately, we saw Soylent Green last night.

I plan to use this while cooking, in lieu of fresh leaves. Let’s see how it works. Looks a bit like green Holi colour, no?
